Il Suino della Marca®
Il Suino della Marca is a native pig genotype from the Marche region, developed from a cross between Large White, Duroc and Cinta Senese breeds.
It is raised in semi-free-range conditions across the rolling pre-Apennine hills of Marche, using farming practices that prioritise:
animal welfare
non-intensive farming
meat quality
and gastronomic yield
Its meat has long been the foundation of traditional cured meats and regional preparations, prized for its structure, flavour and versatility in the kitchen.
A local heritage that becomes a competitive advantage for the most demanding international food players.

SDM EXPORT is an internationalisation project supported by the Marche Region, bringing together three local companies within an integrated supply chain.
Its goal is clear: to deliver an authentic, traceable and reliable gastronomic offering to Europe’s food pioneers, designed for professional restaurants, organized foodservice and international hospitality.
WHAT ARRIVES IN THE KITCHEN

Il Suino della Marca meat is premium, rich in flavour and naturally well-structured.
For generations, it has been the defining ingredient in some of Italy’s most recognizable pork specialties from the Marche region, such as Prosciutto della Marca, Salame di Fabriano, Ciauscolo and Prosciutto di Carpegna.
SDM EXPORT was created to bring this gastronomic heritage to international foodservice through an integrated supply chain, capable of transforming origin into concrete solutions for professional kitchens.
A curated selection of hams, cured meats and gastronomic specialties made from Il Suino della Marca, developed specifically for the HORECA channel.
The supply chain is led by Baldi, which holds exclusive rights to Il Suino della Marca products and coordinates selection, processing and distribution, ensuring consistent quality and industrial reliability.
Antica Gastronomia enhances cooked products and traditional specialties through evolved artisanal processes, supported by traceable digital labels and multilingual content designed to meet the needs of international markets.
Il Suino della Marca becomes the star ingredient in pizza recipes developed for real-world service.
La Pizzeria (PizzaSì) acts as the project’s international accelerator, leveraging a network of over 2,000 clients across Europe and the United States. It develops new SDM-based recipes, tested across different formats and supported by a strong and continuous presence at international trade fairs—making gastronomic innovation immediately applicable.
Together, the SDM EXPORT partners deliver an integrated Made in Marche proposition, that combines sensory quality, full supply-chain traceability and innovation, while speaking the language of professionals working every day in international foodservice.
